I read an article last month about how little Americans think about the meat they eat and how one of the main reasons animals are mistreated is because we demand cheap meat.
Many noteworthy chefs (Mario Batali, Jamie Oliver, Michael Symone & John Besh to name a few) are actually taking an interest in "humane" slaughtering and some are even buying into shares on farms which are dedicated to raising free range chickens and pigs. They then get their share in meat when the time comes.
As a chef I find it interesting, actually because we're supposed to revere things like fois gras and veal as haute cuisine but as regular people we know that shoving feed down a gooses throat to fatten their liver is just horrid.
I don't really have a point I suppose, I just think that you are right-we don't often think about where our food comes from or how it gets on our tables these days.
